Quick, easy meal for two using leftover lamb!!

1/2 lb. cooked Alberta lamb (small pieces or ground)
1 onion, chopped
1 tablespoon olive oil
2 tablespoons lemon juice
1 large tomato, skinned and chopped
1 teaspoon oregano (or to taste)
1 teaspoon basil (or to taste)
Feta cheese, crumbled (optional)

Caramelize the onion in olive oil. To skin the tomato, slit the skin across the bottom,
place in a bowl and pour boiling water over to cover. Leave for about 30 seconds.
Rinse in cold water to cool, peel off skin, and chop. Add all the remaining ingredients
to the pan.
Cover and simmer until the tomato is cooked.
Sprinkle with feta cheese just before serving (optional).
Serves 2.
